Old Fashioned Coffee Cake Recipe
Try out this recipe for some delicious coffee cake! The perfect combo for your morning pick-me-up.
Ingredients:
Streusel (optional inside of cake)
3/4 Cups pecans or walnuts
3/4 Cups sugar
1 Teaspoon cinnamon
Cake:
3 1/3 Cups all-purpose betting tz flour, sifted
1 1/2 Teaspoons salt
2 Teaspoons baking powder
1 Teaspoon baking soda
3/4 Cups buttermilk (1-1/4 cup Milk, bakers choose)
3/4 Cups strong Coffee, cold
2 Teaspoons vanilla
1 1/2 sticks (12 Tablespoons) unsalted butter, soft
1 3/4 Cups sugar
3 large eggs (healthier option 3 whole Egg Whites, Beaten Until Stiff)
Glaze Top (with more of a coffee Kick):
1/4 Cup strong Coffee
2 1/2 Cups sifted powdered sugar
Crumble Top Option (coffee free):
1-1/2 stick Butter, Softened
3/4 cups Flour
1-1/2 cup Brown Sugar
2 Tablespoons Cinnamon
1-1/2 cup Pecans, Chopped
Directions:
Preheat oven to 350 degrees.
Use a 9x13” Pan or Bundt pan
1. The Streusel (optional):
Pecans are optional. If using the pecans though, chop them finely or give them a spin in a food processor. Mix the chopped nuts with the cinnamon and sugar and set it aside for later.
2. Batter Preparation
Once you have your coffee brewed, bets cool it off in the fridge. Mix coffee with vanilla and buttermilk in separate bowl.
Mix together all the dry ingredients for the cake in a separate bowl and set it aside.
Using a stand mixer or a hand mixer, beat the butter and sugar together until they’re light and fluffy, about 5 minutes with a stand mixer or 10 with a hand mixer. Add the eggs one at a time, mixing in between each one.
Incorporate the dry ingredient mix and the wet ingredient mix into the creamed butter.
- Add 1/3 of your dry ingredients to the creamed butter and combine.
- Add 1/2 your liquid and mix together.
- Add 1/3 of your dry ingredients and stir.
- Add the rest of your liquid and stir.
- Finally, add the rest of your dry ingredients and combine. If you’re using a stand mixer, be sure to scrape the bowl down.
You should end up with a really light and fluffy batter
3. Pour
If you’re using a bundt cake, be sure to lightly sport bet online butter and flour the pan so the cake comes out easily after baking. Pour HALF of your batter into the prepared pan and even it out.
Add all your streusel evenly and then pour the rest of your batter over the streusel.
If using the crumble top option: In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.
4. Bake!
Bake at 350 degrees until a wooden skewer comes out clean. 45 – 60 minutes.
5. The Glaze
Combine some coffee with sifted powdered sugar until it’s smooth. Then drizzle it over the cake!
Serve warm---delicious!
